Once named Esposito at Toofey’s, more recently this corner restaurant in Carlton has been christened Cucina di Esposito, and is the eponymous restaurant of chef Maurice Esposito. With an Italian heritage and love for sustainable fish of all kinds, and a career that spans over 20 years, a few continents and a list of kitchens run for the likes of Maurice Terzini (Otto), the Van Handel brothers (Stokehouse) and Joe Mammone (Il Bacaro/Sarti), Maurice cooks with a slight irreverence to tradition but a faithful commitment to clear and clean flavours.
